Steamed Fish with Ye Traditions Red Rice Wine
Fish is a must have every Chinese New Year, as it stands for 年年有鱼, literally meaning that we will have abundance for the year ahead. As Chinese New Year tends to be a time of feasting, we highly recommend our rice wines to dishes as rice wines are packed with probiotics, so it does help with digesting all the delicious meals and snacks. This year, we are sharing our steamed fish recipe, using Ye Traditions Red Rice Wine, to bring out a bold and fresh taste for your reunion gatherings.
- Fish: 1 whole grouper fish (You can use any white fish e.g., sea bass, snapper)
- Ye Traditions Red Rice Wine: 100ml
- Ginger: 1-inch piece
- Scallions: 3 stalks, cut into 2-inch lengths (separate white and green parts)
- Soy sauce: 2 tablespoons
- Sesame oil: 1 teaspoon
- White pepper: A pinch
- Fresh cilantro: For garnish (optional)
Instructions
1. Prepare the Fish
- Pat the fish and make 2-3 diagonal slashes on each side for even cooking
- Lightly pour a few tablespoons of Ye Traditions Red Rice Wine including the cavity, and let it marinate for 10–15 minutes. This helps the fish get more tender.
- We used red rice wine here as we wanted it to look red and festive, and also for the bolder and earthier flavours to bring out the lightness of the dish.
2. Prepare the Steaming Plate
- Lay a bed of scallion whites and ginger on a plate.
- Place the marinated fish on top.
3. Steam the Fish
- Set up a steamer and bring water to a boil.
- Place the fish in the steamer and steam over medium-high heat for 8–10 minutes, or until the flesh flakes easily with a fork.
4. Prepare the Sauce
- In a small saucepan, heat the vegetable oil over medium heat. Add the remaining ginger and stir-fry until fragrant (about 1 minute).
- Stir in soy sauce, remaining of the rice wine and sesame oil.
- Heat gently as we want to retain that alcohol goodness, then remove from the heat.
5. Finish and Serve
- Carefully remove the fish from the steamer. Discard the scallion whites, ginger underneath and the gravy.
- Pour the prepared sauce over the fish.
- Garnish with the scallion greens
6. Optional Sizzle
- Heat 1 tablespoon of hot vegetable oil until it shimmers.
- Drizzle over the fish and garnish to release an aromatic finish.
- This step, while optional really helps elevate the dish and lets out the fragrance of the scallions.
