Three Cup Chicken (Sanbeiji 三杯鸡) Recipe

Need an easy dish for tonight - why not try out Three Cup Chicken, directly translated from Chinese: Sān Bēi Jī 三杯鸡. The name comes from the three main ingredients: rice wine, sesame oil, and soy sauce. 

Because this is a household dish, every family has its own way of making it, and for us, we do not use a 1:1:1 ratio, instead as rice wine fanatics, we are more generous with the rice wine in this dish. Because this dish is so flexible, you can tweak it to the proportion that you like, and the best part is that these ingredients can be easily found at home and cooked in one pot.

Three Cup Chicken (Sanbeiji 三杯鸡) Recipe Video

Ingredients:

- 2 chicken drumsticks or breasts (cut into bite-sized pieces)

- 3 tablespoons soy sauce

- 3 tablespoons sesame oil

- 1/4 cup Ye Traditions Yellow Rice Wine

- 3 tablespoons olive oil

- 1 inch ginger (sliced)

- 1/4 cup basil leaves

- 2 chilis (sliced), optional

- 2 tablespoon dark soy sauce, optional

Instructions:

  1. In a hot pan, add olive oil and sauté ginger until fragrant.
  2. Add in sliced chillis for that extra punch, continue sautéing. 
  3. Add chicken pieces and cook until they start to brown.
  4. Pour in soy sauce, rice wine, and sesame oil mixture. Stir well to combine.
  5. Add in dark soy sauce for a darker color. You can omit this. 
  6. Cover and let it simmer for about 15-20 minutes until the chicken is cooked through.
  7. Uncover and let the sauce thicken slightly.
  8. Add basil leaves, stir to combine.
  9. Serve hot over steamed rice and enjoy!
