What is Jiu Niang or Sweet Fermented Glutinous Rice?

Recipe for Jiu Niang Tang Yuan

Ingredients:

  • Tang Yuan (glutinous rice balls)
  • 1 cup jiu niang (fermented glutinous rice)
  • 2 cups water
  • 1/4 cup sugar (optional, adjust to taste)
  • Goji berries (for garnish, optional)
  • Osmanthus flowers (for garnish, optional)

 

Instructions (serves 4)

    1. Cook the Rice Balls:

    • Bring 2 cups of water to a boil in a pot.
    • Add the glutinous rice balls to the boiling water and cook until they float to the surface (about 5 minutes).

    2. Prepare the Sweet Soup:

    • In the same pot, pour in 200g of Jiu Niang.
    • Heat the mixture over medium heat until warm, but do not bring it to a boil.
    • Add sugar if desired, adjusting to taste.

      3. Garnish and Enjoy:

      • Ladle the sweet soup with rice balls into serving bowls.
      • Garnish with goji berries and osmanthus flowers for an added touch of color and nutrition.
