Glutinous Rice Wine Jelly with Coconut Flakes
Living in Singapore and being born with a sweet tooth, we always find excuses to have desserts, and thankfully, with rice wines in our repertoire, we manage to have healthier alternatives to our desserts that still taste as delicious.
Combining the sweet and tangy flavors of jiu niang 酒酿 (fermented glutinous rice) with the tropical taste of coconut, this dessert is sure to impress. Follow this incredibly simple recipe that we came up with to create a delicious and visually appealing treat.
Ingredients:
- Gelatin powder (I used the Swallow Brand AgarAgar Jelly (White Version)
- 150ml jiu niang (fermented glutinous rice)
- 850ml water
- 200g sugar (adjust to taste)
- 1/2 cup coconut flakes
Instructions:
- In a saucepan, boil the water and after water boils, add in the gelatin powder, sugar, and jiu niang.
- Pour the mixture into a container
- Add the coconut flakes to the jiu niang jelly mixture
- Let it cool then put in the fridge
