Fried Pork Ribs with Red Rice Yeast (红糟炸排骨) Recipe with Ye Traditions
Red Yeast Rice or 红糟 is the beautiful byproduct after fermenting red rice wine, or hong zao jiu (红糟酒). There has been plenty of research that red yeast rice is good for your health, specifically in Chinese medicine, red yeast rice is used to lower cholesterol, improve blood circulation, and improve digestion.
Red yeast rice also contains chemicals that are similar to prescription statin medications. One of these, called monacolin K, has the same makeup as the drug lovastatin (Mevacor). Doctors prescribe statins to lower LDL ("bad") cholesterol levels and help reduce the risk of heart disease.
But enough with the science-y stuff, we thought that this dish would be something different from the hearty red rice wine chicken soup dish (红糟鸡汤), and can make for a regular dinner dish.
Fried Pork Ribs with Red Rice Yeast (红糟炸排骨) Recipe with Ye Traditions
This recipe serves 4 people.
Ingredients:
- 500g pork ribs, cut into chunks
- 1 tablespoon of red yeast rice (use more if you like a richer taste)
- 1 piece red fermented bean curd
- 1/2 tablespoon oyster sauce
- 1/2 tablespoon light soy sauce
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon pepper
- 3 tablespoons oil (and 1 liter for frying)
- 3 tablespoons water
- 3 tablespoons corn flour
Instructions:
- Rinse pork ribs well and wipe dry. Mix well with the rest of the ingredients and marinate for 30-60 minutes.
- Heat 1 liter of oil in a wok and deep fry pork ribs over medium heat until done. Turn to high heat and deep fry for another 2 minutes. Drain. (You can use an air fryer here as well).
- Dish out and serve.
