You might be familiar with the Glutinous Rice Wine with Tang Yuan recipe, but what about an even simpler version: Fermented Glutinous Rice Wine and Egg Dessert, or Jiu Niang and Egg, is a classic Chinese treat that combines the sweetness of fermented glutinous rice (jiu niang) with the richness of eggs. This dessert is warm, high in protein, comforting, and very easy to make, making it perfect for a soothing treat any time of the day. 

Ingredients:

  • 1 cup jiu niang (fermented glutinous rice)
  • 2 cups water
  • 1/4 cup sugar (adjust to taste)
  • 2 eggs
  • Goji berries (for garnish, optional)

Instructions:

1. Prepare the Jiu Niang Mixture:

  • In a pot, combine 1 cup of jiu niang with 2 cups of water.
  • Add 1/4 cup of sugar, adjusting to your taste preference.

2. Heat the Mixture:

  • Heat the mixture over medium heat until it comes to a gentle simmer.
  • Stir occasionally to ensure the sugar is fully dissolved.

3. Add the Eggs:

  • Crack the eggs into a bowl and beat them lightly.
  • Slowly pour the beaten eggs into the simmering jiu niang mixture while stirring gently to create egg ribbons. This should take about 1-2 minutes.

4. Cook the Eggs:

  • Continue to simmer for another 2-3 minutes until the eggs are fully cooked but still tender.

5. Serve:

  • Ladle the jiu niang and egg mixture into bowls.
  • Garnish with goji berries for a touch of color and added nutrition, if desired.

Tips:

  • Adjust Sweetness: Feel free to adjust the amount of sugar based on your preference. Jiu niang is naturally sweet, so you might want to start with less sugar and add more if needed.
  • Additions: You can also add a few slices of ginger for a warming touch, or a splash of rice wine for extra flavor.
  • Serving: This dessert is best enjoyed warm, making it perfect for cooler days or as a comforting treat before bed. It also helps with cramps because of its warming effects.
